About The Steak
This steak is a NY Sirloin steak from Lilac Hedge Farm, in Rutland MA. I have been getting their meat delivered for about a year now and it has been fantastic. The prices are great and you can taste the difference in the quaity of meat! Everything I've gotten from here has been delicious and I could not reccomend getting meat from a farm enoguh!

Lilac Hedge ships meat frozen and their reccomended thawing out process says to put the meat in the fridhe 24hrs prior to cooking. I've honestly thatwed it out at room temperature in 4-6 hours and haven't had a problem.
Either way, start by taking the steak out of the fridge about 30 minutes before cooking. This brings the meat to room temperature, which aids in even cooking.
Next, dry the steak with paper towels to avoid steaming on the grill. Generously season both sides with coarse salt and freshly ground black pepper. You can also sprinkle some garlic powder or smoked paprika for an extra punch. Allow it to rest for about 5-10 minutes. This time helps the seasonings soak in, enhancing the meat’s flavor.
Grilling Onions and Peppers
Grilled onions and peppers add a delicious sweetness and smoky flavor to your steak. My favorite is a red bell pepper, but feel free to add yellow, orange, and/or green bell peppers to make it more colorful. Slice the onions into thick chunks so they hold up better on the grill.
Preheat your grill to medium-high heat. Coat the sliced vegetables with olive oil, salt, and pepper. For a richer flavor, try adding a splash of balsamic vinegar.
Place the veggies on a grill pan. Grill for around 8–10 minutes, turning them often until they become tender and show beautiful grill marks. According to grilling experts, grilling at ideal temperatures can enhance flavor retention by up to 30%, so don’t rush this step.
Cooking the Perfect Steak
With the grill ready, place the steak directly on the grates, ensuring no other materials are touching it. Cook the steak undisturbed, timimg will depend on the thickness, weight, and desired done-ness of the steak. Typically it's around 4-5 minutes per side.
My dad taught my the trick of making a fist and checking the fatty part of the hand in between your index finger and thumb; if you make a really loose fist, like you're barely holding anything, and you poke that fatty area, that's what a raw steak would feel like. Make a medium fist and poke the fatty area - that's what the steak will feel like when it's medium. Finally the hardest fist you can make will feel like a well done steak (best to avoid this!)
Another great way to make sure you're steak is perfect every time is with the Meater Duo Pro meat thermometers. These things work great and they work in the grill, in the oven, or in a pan! Any meat I cook comes out perfect every time I use them. Just be sure to make sure you charge them before you go to ue them!
A medium-rare steak typically has an internal temperature of about 130°F to 135°F, which allows for a tender, juicy bite that is scientifically proven to be the most flavorful.
Making Savory Pan-Roasted Potatoes
While your steak is grilling, you can prepare the pan-roasted potatoes. Small potatoes like baby Yukon gold or fingerlings are perfect for this dish. Start by washing and cutting the potatoes in halves or quarters to ensure even cooking.
There are two ways to do this: in the oven or in a cast iron skillet.
If you want to use the oven, preheat it to 425F-450F. Put the cut potatoes in a mixing bowl and mix with olive oil, salt, and pepper. Spread them out on a sheet-pan (use aluminum foil for easier cleanup), and place them in the oven for 35-45 minutes. Make sure to check and flip them about halfway through cooking time.
If using a cast iron skillet, heat a tablespoon of olive oil in the skillet over medium heat. Once the oil shimmers, add the potatoes cut-side down. Allow them to cook without moving for about 10 minutes to form a crispy golden crust.
